Christian’s Marinated Feta recipie
Ingredients:
- 2 packets of low-fat feta
- Light olive oil
- Extra virgin olive oil
- Groundnut (peanut) or other light tasting food oil
- 2 cloves garlic, sliced
- 2 teaspoons dried herbs
- 1 teaspoon lemon zest
- ½ teaspoon dried chilli
- Pinch of cumin powder
- ½ teaspoon coriander seeds, crushed
- ½ teaspoon crushed peppercorns
Preparation:
- Rinse off the feta to remove salt water. Pat dry with kitchen paper
- Cut feta into small bite-sized cubes, put into a sealable container that
will be put into the fridge
- Add all the ingredients together in the container, over the feta cubes
- Add oil to cover, ½ light olive oil, ¼ extra virgin, ¼
other food oil
- Seal the container, and place upside-down so that all the ingredients mix
- Leave out of the fridge for 2 hours, then shake to distribute the dry flavourings
- Refridgerate and then enjoy whenever desired
Why?
- I use low-fat feta as the flavour comes from the marinade.
- I use light tasting olive oil as the base, as it's not such a strong taste
and works better.
- I add other oils to the mix, as pure olive oil turns cloudy (and sometimes
to jelly) at low temperatures - the other oils tend to prevent this from happening,
just use a light tasting oil.
- The cumin gives a toasty flavour. I have also tried a pinch of 'Taco seasoning'
which also tastes great. Try your own seasonings.
I prefer to use dried herbs and dried chilli as there is a much reduced chance
of this causing infection from bacteria or mould on the herbs. But, if you want
to use fresh (washed and patted dry) herbs or chilli, heat up the oil to blood
hot first in a pan, then add the herbs until they just stop fizzling - this
should be enough to remove the water and kill any bacteria or mould. The garlic
also helps with keeping bacteria away. Let the oil cool before pouring over
the feta or putting in any plastic container...!
I have found that once the feta is all gone and the oil is left, you can add
a new set of feta cubes to marinade, up to twice again. Just top up with oil.
